Tonight's dinner


Tonight we had Panko crusted Flounder and Scamp from Panama City, Fl. I made a savory sweet potato mash, and some tartar sauce. The salad is fresh greens from my garden. I cant believe I still have some left. Yummo!

It's Salsa Time!!






And I dont mean the dance! Hahaha. Today I made 27 pints of medium heat Salsa. I had several people waiting on me to make some more and today was the day. I cant wait to share some with the girls at the Salon. I do hair 3 days a week in case you didnt know. Tomorrow, I have to face the dreaded weight watcher scale after splurging on Thanksgiving, or should I say the week of Thanksgiving. :) Time to get strict again, but my birthday is Monday! What about the cake and the free dinner from Provinos. And then there's the free lunch from Longhorns with my co workers. I'm doomed! Oh well, it is what it is.

What to do with leftover meatloaf, make enchiladas!

I had some leftover chorizo meatloaf that I needed to use. As I was in the grocery store I noticed that avacados were on sale, and from that, I had the idea of making enchiladas with my leftover meatloaf. I just layered the corn tortillas across the bottom of the dish then sliced the meatloaf and layered them across the tortillas. I then shredded some white cheddar cheese and sprinkled across the meat. I took half a can of enchilada sauce and poured on the meat and cheese, then layered more tortillas , sprinkled more cheese, and poured the rest of the sauce on top. Bake at 375 for about 20 minutes or until melted and hot. It was very good. I also made some avacado salsa to top it with, along with some sour cream. YUM!

Dinner at the Depot




Tonight we went to Kennesaw to Dinner at the Depot. Only 2 trucks show up, which was us and Cajun Johns. There were some brave souls that attended. We really appreciate your support. We are supposed to go again next Monday December 5th, which happens to be my birthday! Hope to see you there!

I'm BACK!!



I'm back!! Have I got a lot to share!
Alisha's Kitchen has come a long way since my last posting. We have went from food tents to a food trailer. We are now setting up every Friday and Saturday on Third Army Rd. in Acworth, unless we have an event or catering job. Our Monday nights have been spent in downtown Kennesaw at Dinner at the Depot. It is a food truck gathering and is a big hit. We really enjoy going out there. It is from 5pm until 8pm on Mondays. I will be posting pictures of our latest events. Kennesaw Pigs and Peaches BBQ festival was this summer. I was blown away at how busy it was! We will definitely go back next year, but with some help! We have done a couple of weddings, car shows, Taste of Cartersville, and my 25th high school reunion. It has been a busy year! Oh yea, I also auditioned for the TV show MasterChef! That was fun and nerve racking! I will go into more detail later when posting pictures. I have been entering recipe contests. I think that suits me better, I just don't have that big TV personality or all the drama that TV requires. I will also be posting recipes and pics of meals that I create at home. I hope ya'll will enjoy reading my blog!
